Cookie Dough Bliss Bites // Kugler med chokoladestykker

Are you looking for caramel cookie dough bliss bites with chocolate chunks? Cus they right here and they are everything! I have been wanting to post this recipe with you guys for such a long time and today is the day. If you are on the hunt for the perfect weekend treat, you have come to the right place. These bliss bites are incredibly delicious, so indulgent, so easy to make and the absolute best thing is the fact that they are gluten and refined sugar free. Why not get into the recipe?:

First off, we need to make some chocolate:

Ingredients:

¼  cup coconut oil

3 tbsp. carob powder

Pinch of cinnamon


Method:

Melt the coconut oil at low heat and sift the carob powder into the melted oil. Add cinnamon and stir.

Pour the melted chocolate into a container lined with baking paper and place in the freezer for a couple of hours. 


Then remove the chocolate from the freezer and chop the chocolate into smaller pieces to massage into the cookie dough.


When the chocolate is ready, go ahead and make the 'cookie dough' (store the chocolate chunks in the freezer until needed): 


Ingredients for the cookie dough bliss bites:

1 cup dates (200 g)

5 tbsp. desiccated coconut flour (20 g)

½ cup coconut flour (50 g)

¼  tsp. vanilla powder


Method: 

Place all the ingredients in the mini chopper or food processor and blend until sticky and combined. 

Roll the dough into balls the desired size massaging some chocolate chunks into the ball. 

Place in the fridge for a few hours and they are ready!


Store the bliss bites in the fridge for up to 2-3 days.

DANSK OPSKRIFT:

2 - 3 personer // Total tid: 4 timer // Arbejdstid: 30 minutter


Først laves chokoladen: Ingredienser ½ dl kokosolie 3 spsk. carob pulver 1 knsp. stødt ceylon kanel

Metode: Smelt kokosolien i en gryde ved svag varme hvorefter den fjernes fra varmen. Si carob ned i den smeltede olie, tilsæt kanel og rør det sammen.

Hæld chokoladen i en lille beholder beklædt med bagepapir og kom den i fryseren i et par timer.

Når der er gået et par timer og chokoladen er hård kan du skære den i mindre stykker der kan masseres ind i kuglerne. Når chokoladen er klar kan du lave kuglerne - opbevar chokoladestykkerne i fryseren imens.

Ingredienser til karamelkuglerne: 200 g Medjool dadler, stenfri 20 g groft kokosmel 50 g fint kokosmel ¼ tsk. vaniljepulver

Metode: Kom alle ingredienserne i en minihakker eller foodprocessor og blend til du har en samlet masse.

Rul til kugler i den ønskede størrelse hvorefter chokoladestykkerne æltes ind i kuglerne.

Kom dem i køleskabet i et par timer og de er klar til servering!
